Seaweed no match for japanese gut bacteria

an ethnic specific gut bacteria has been found. japanese are better able to digest seaweed b/c they have a bacteria in their guts that breaks down algal cell walls. the only other place this ability is found is in marine bacteria.

According to the researchers, the enzyme helps Z. galactanivorans eat red algae, which westerners know best as the nori seaweed wrapping around sushi rolls. At some unknown points and in some unknown stomachs in the Japanese past, the enzyme-coding gene passed from Z. galactanivorans and into B. plebeius. That lucky microbe would have benefited from a newfound ability to process red algae, spreading through its stomach environment and eventually the human population, who in turn derived more nutrients from an algae-rich diet.

“Often the question comes, ‘I’ve been eating sushi for two years now. Do I have this enzyme?’ The answer is, these are very rare events,” said Czjzek. “In the early days, seaweed wasn’t sterilized. Nowadays, it’s cooked, roasted and prepared. The chance to have this type of transfer is much lower.”

That’s likely the case with most types of food, said Gewirtz. As for whether “that’s a good or a bad thing, it’s hard to say,” he said. But Justin Sonnenburg, a Stanford University microbiologist who wrote a commentary accompanying the findings, is concerned.

“Consumption of hyper-hygienic, mass-produced, highly-processed and calorie-dense foods is testing how rapidly the microbiota of individuals in industrialized countries can adapt while being deprived of the environmental reservoirs of microbial genes,” he wrote.

i didn’t know how gut bacteria was passed down, but thankfully wiki has that covered. infants inhale or ingest the bacteria from the mom’s feces at birth. wtf ?

this makes me wonder about the gut bacteria of world travelers. if they travel and eat exotic foods from all over the world, would that possibly make their stomachs super digesters?

fat hicks and hillbillies

the nation’s 5 fattest counties are “Greene and Dallas counties in Alabama and Holmes, Humphreys and Jefferson counties in Mississippi.” these counties are mostly populated by poor rural african-americans, and some of the estimates might be off, the article said.

other righteously rotund counties are in appalachian territory like kentucky and west virginia.

sad and pathetic, but unsurprising. counties in colorado, new mexico and utah had the lowest obesity rates.

Sugar intake demographics

saw this first at gnxp. a survey of sugar intake was conducted and it shows that sugar intake for asian americans is the lowest among races.

The intake of added sugars was higher among men than women and inversely related to age, educational status, and family income. Asian Americans had the lowest intake and Hispanics the next lowest intake. Among men, African Americans had the highest intake, although whites and American Indians/Alaskan Natives also had high intakes. Among women, African Americans and American Indians/Alaskan Natives had the highest intakes. Intake of added sugars was inversely related to educational attainment in whites, African Americans, Hispanic men, and American Indians/Alaskan Native men, but was unrelated in Asian Americans. These findings were generally consistent with relationships in National Health and Nutrition Examination Survey 2003-2004 (using one or two 24-hour dietary recalls).

they should start regulating sugar as a drug. eating more of it makes u stupid and poor!

Bon Appetite:Annual Landraneau Crawfish Broil ’09

The famous annual Landraneau Crawfish Broil was in full effect.  Roughly 120lbs of fresh crawfish were cooked up true ‘Orleans style, and consumed as such. Some pictures of Chef Landraneau himself from start to finish.  Chowing down consists of painstakingly prying for your little bit of prize meat. Some say it’s not worth it. But eating is just part of the fun. Around the table is where the action is at; chit-chatting while your attack the food….messy, yet so good. (more…)

Bon Appetite: Dumplings/Potstickers

Dumplings

For the next episode of delectable delights, we venture our inspiration from the continent of Asia. Tired of the corruption by pre-fab and frozen poisons, we set forth to find the freshness, the succulence, the satisfaction of the real deal. Some ingredients included in this version are napa cabbage, shitaki mushrooms, ground pork, shrimp, ginger root. Once all were bathed and prepped, they enjoyed an icebreaker in a large bowl, before being wrapped up. From that point they either enjoyed the fate of simmering in the boiling pool of water or dancing on the frying pan floor. As mentioned before, I will continue in my attempts to document these adventures. Attempt to enjoy. (more…)
